Veg Panini

Veg Panini

Panini, the Italian name for a sandwich which uses any type of bread besides the regular sliced bread. Ciabatta, Bauguette or Rosetta are the typical breads that are used to make a panini.

This name is more commonly used by Americans and British to  refer to any type of grilled sandwich.

People usually alter a panini filling as per their choice.

For this recipe I have used Ciabatta (pronounced as Chabatta). This italian bread is typically made of wheat flour and yeast to help it rise. This is good news for weight watchers as it does not use white flour.

Another uncommon ingredient used here is the Halloumi (pronounced as hellumi) Cheese. This cheese originated in Cyprus. It has a high melting point which allows us to grill or fry it without melting and falling apart.

Ingredients

Ciabiatta ……………….. 1 small

Tomato …………………..1 sliced

Sliced Black olives ……2 tablespoons

Lettuce ………………….2 Long leaves

Cucumber ………………1/3 . sliced

Halloumi cheese

Olive Oil …………………1 teaspoon

Salt ……………………….seasoning

Black Pepper…………..freshly crushed

Method

  1. Cut the ciabatta horizontally.
  2. Fill in the veggies and cheese.
  3. Drizzle the olive oil on the veggies.
  4. Season it with salt and pepper.
  5. Put it in an electric grill for a couple of minutes in high. Remember that the bread is already crunchy from the top. You do not want to make it harder.
  6. Serve hot.
