Fresh Fish Fillet …………………… 400 grams; deboned and steamed (or boiled)
Potato ………………………………. 1 medium size; boiled and peeled
Onion …………………………………1 small; finely chopped
Coriander leaves ………………….1/4 cup; finely chopped
Garlic Paste ………………………..11/2 teaspoons
Red chili powder ………………….3/4 teaspoon
Cumin seeds ……………………….1/2 teaspoon ; whole
Dry Mango powder (aamchur)…. a pinch
Black Onion Seeds (kalonji) ……..1/2 teaspoon
White Sesame Seeds………………1/2 teaspoon
Garam masala ………………………1/2 teaspoon
Egg White …………………………….1
Salt …………………………………..seasoning
Directions
- Season the fish fillet and steam the fish using a double boiler for 5-8 minutes depending on the thickness of the fillets.
- Boil the potatoes and remove the skin.
- Once the fish and potatoes are cool enough crush them using your hands in separate bowls. Try not to use a food processor for this step so that we can retain the delicate layers of the fish and at the same time get rid of any soft bones that might be embedded within the fillet layers. Fish have different bone structure. So make sure to use one with less bones like the king fish.
- Combine the potatoes, fish and all the remaining ingredients and make flat patties. Let it rest for 5-10 minutes in the refrigerator.
- Before frying them in a shallow saucepan, dip the patties in the egg white.
- Serve warm.
